Founder Takeshi Nagashima, a Michelin-starred chef whose career was shaped by his time at the legendary three-star El Bulli in Spain, leads 81, a visionary and multifaceted culinary powerhouse. Since establishing 81 in 2012 and earning a Michelin star shortly after, he has launched Acorn in Niseko, 81 Diner & Grocery, and 81 Lab. Through collaborations with iconic festivals and luxury brands like Veuve Clicquot, Takeshi sets the platinum standard in gastronomy, seamlessly blending tradition and innovation to craft unforgettable dining experiences.

Executive Chef Paco La Monica, whose career spans some of the world's most renowned restaurants, including Noma in Copenhagen, Gaggan in Bangkok, and KOKS in the Faroe Islands, brings unmatched versatility and artistry to every dish. From Italian heritage cuisine to Japanese kaiseki, his creations reflect a world of culinary traditions
